Asian Fresh Veggie Bowls

  • Edamame
  • Diced scallions
  • White rice
  • Thinly sliced Avocado
  • Shredded carrot
  • Diced Cucumber
  • Mayo (1/2 cup)
  • Sriracha sauce (1/4 cup)
  • Juice from half lemon
  • 1lb peeled shrimp
  • Olive oil
  • Few cloves minced garlic
  • Sesame seeds black
  1. Cook white rice with tbsp butter and pinch of salt
  2. Cook shrimp for a few min on stove top with garlic and olive oil
  3. Combine mayo, sriracha and lemon juice for spicy sriracha mayo
  4. Assemble Bowls with rice, carrots, edamame, chopped scallions, avocado, cucumber, shrimp and top with spicy mayo and black sesame seeds.
